Since summer is here, we’re all getting excited for those summer barbecues full of laughs, games, and food. No BBQ would be complete without a tasty pasta salad, sure to feed a whole hungry crowd! This Broccoli Lemon Pasta Salad is one of my favorites, and takes less than 30 minutes to prepare!
1/2 an onion
Handful of sun-dried tomatoes
Red pepper flakes
Salt and pepper
What to do:
Begin by boiling your pasta. Depending on how many people you want to serve, either make the whole box or half a box!
On a cutting board, chop up your broccoli into small florets.
In addition to chopping up the broccoli, also dice up your onion, garlic and sun-dried tomatoes.
Boil your broccoli in a small pot of water, or pop in the microwave in a bowl of water and heat at 30 second intervals. Basically, cook the broccoli until it is no longer crunchy.
In a pan, add olive oil, garlic and onions on a low setting.
Then, add the broccoli, sun-dried tomatoes, and lemon juice.
Strain your pasta, but save a little pasta water and add it to the mixture in the pan. Toss in the pasta.
Next, add some salt, pepper, parmesan and red pepper flakes.
Mix it up until the ingredients are all evenly coated.
Serve immediately or store in the fridge!
